Fresh Pesto Spaghetti with Prawns

Pesto:

250 gm your choice of herbs (preferably parsley and basil)

1 cup cashew or walnut

2 tbls of lemon juice

2 tbls of pine nuts (optional)

2 tbls of grated parmesan cheese

salt and pepper according to taste

fill a clean masonry jar with pesto and top up with extra virgin oil


mix all ingredients and blend in food processors to get required consistency, I prefer my pesto bit chunky and coarse


Pasta

Boil any choice of pasta with pinch of salt and 1 tablespoon oil in a pot


in a separate pan add 2 tbls olive oil, add 1 tbls of fresh ricotta cheese, add desired amount of pesto, I used 2 tbls in my recipe, let it cook for 2 minutes


add shrimps, prawns or any other meat about 200gms cut in small pieces, cook for another 2 minutes, add pasta and stir well, let it cook for another few minutes, stop when it starts boiling


Garnish with sun fried tomatoes, grated parmesan and capers and Enjoy!!
