Mexican Beef Chili Mole

A traditional Mexican dish!! Mole is one of the most recognizable dish is Mexico. Mole (sauce) is a unique combination of chocolate and hot peppers. I have cooked this recipe 3rd time now and I quiet enjoy it with my family! If you have kids you can make it less spicy and kids would love it too! I love serving beef chili mole with corn salsa and warm tortillas....

To create this unique recipe I have used following ingredients:


1 medium size brown onion

3 tbsp. olive oil

4 cloves garlic crushed

1kg beef chucks , cut into an inch size cubes

100 grams of bacon chopped

2 cups beef stock

2 cups water

1 Chipotle peppers in adobo sauce

2 tbsp. grated Mexican or dark chocolate

500g of black beans canned

2 tbsp. of tomato paste

1 tbsp. cumin powder

1 tbsp. of smoked paprika

1/2 tbsp. of chili flakes

1 tbsp. of coriander powder

1/4 tbsp. of chili powder

pinch of cinnamon powder

How to cook:

In a slow cooker or non stick deep pan, heat oil, fry onions for about 5 minutes or until golden brown, add garlic and cook further for few minutes. Add all ingredients and mix well, cook it on a low heat with a lid on for couple of hours, stir occasionally. I like to cook mine until meat breaks down and sauce thickens, use below mentioned ingredients to garnish before serving...


to garnish:

100gm of crushed haloumi or fetta cheese or grated cheddar cheese

Sliced Jalapenos and chopped parsley to garnish


Corn Salsa:

500 grams of corn canned, rinsed thoroughly

1 small red onion finely chopped

1 tbsp. of finely chopped jalapenos

2 tbsp. of parsley chopped

1 lemon juice

pinch 0f kosher salt

pinch of sweet paprika


Mix all ingredients to make corn salsa , let it cool in the fridge for at least half an hour before serving


I bought readymade tortillas from my local grocery store, you can heat those in microwave or in a pan with drizzle of olive oil...


Serve beef chili mole with corn salsa and warm tortillas!! Enjoy this perfect winter food!!
